Opened in early 2026 by Alice and Jérôme Tourbier as their third property in French wine regions. The property is located in the magnificent Château de Gilly, a former residence of the Abbots of Cîteaux dating from the 14th century. Steeped in the history of the Cistercian monks who helped shape Burgundy’s wine heritage, the château has been thoughtfully restored with 49 rooms and suites, preserving its remarkable architecture while introducing the discreet elegance and warmth that define the Les Sources collection.
One of the estate’s most extraordinary features is the Caudalie Spa, set beneath the château’s ancient vaulted ceilings in the former 14th-century wine cellar once used by the Cistercian monks. With its two serene pools, stone columns and atmospheric setting, it offers a truly unique Vinothérapie® experience, where the heritage of the vineyard becomes an invitation to relaxation.
Gastronomy is equally central to the experience. Le Clos de la Tour, the château’s gastronomic restaurant, celebrates Burgundy’s exceptional terroir through refined, seasonal cuisine and an outstanding wine selection. At L’Auberge des Cîteaux, Chef Julien Martin offers a more convivial interpretation of Burgundian cuisine, rooted in local traditions and produce.
